Benefits of Certified Maine Lobster

A Sustainable Fishery
Maine is the world leader in sustainable lobster fishing practices. As a result the lobster population is strong and the catch remains steady year to year. The World Wildlife Fund is currently supporting the Maine Lobster fishery in its application for Marine Stewardship Council certification, due to conservation practices such as:
• Size limits—Maine lobstermen use a gauge to measure the body of the lobster, throwing back lobsters under 3-1/4 inches (so they can grow to maturity and breed) and over 5 inches (considered to be good breeding stock).
• Female V notching— A female with visible eggs on her tail can't be kept. Before tossing her back, the harvester notches her tail to identify her as a good breeder. Lobsters with notched tails must be returned to the water even if they're not showing eggs.
• Trap limits—there are statewide as well as local limits to the number of traps, preventing overfishing.
• Trap design—traps are designed with escape hatches for small lobsters and biodegradable escape hatches so that lost traps aren't a hazard.
• Apprenticing—new lobstermen are required to apprentice with veterans to learn these regulations as well as the ethos of Maine Lobster fishing.

Try our Maine Remoulade Sauce with your Lobster Cakes!

Your Maine Lobster Cakes made simple using our 100% Certified Maine Lobster Meat aren't complete until you have a tasty Remoulade Sauce.
Try our simple and delicious recipe:

2/3 cup mayonnaise
2 scallions, chopped
2 tablespoons dill, minced
A dash of fresh lemon juice
2 tablespoons drained white horseradish
4 tablespoons whole-grain mustard
1 tablespoon ketchup
1 teaspoon worcestershire sauce
1 tablespoon paprika

Mix ingredients together, add salt, pepper and Tabasco sauce to taste. Enjoy!

Shucks has 2 Finalists in the IBSS 2009 New Product Competition!

Our new Maine Lobster Carpaccio and Maine Lobster Ceviche have both been selected as finalists in the International Boston Seafood Show 2009 New Product Competition.

Both of these products are raw, but FDA certified ready to eat! How can that be? It's the magic of our Big Mother Shucker. We treat the sealed packages with extremely high pressure, killing pathogens even more effectively than cooking. No heat, no chemicals, just water and pressure. The results are the delicious, contemporary flavors and textures of raw seafood with no risk.

Maine Lobster Ceviche is a retail package of two servings. The raw lobster meat is in one pouch and the zesty accompaniments are in another. Thaw, mix the ingredients in a bowl, chill and serve with tortilla chips. An affordable, unique lobster treat!

Lobsters Are Coming Out Of Their Shells

The Cape Cod Times visited us at the International Boston Seafood Show and convinced us to give them a sample:

"Shucks...has helped revolutionize how people think about lobsters. Chefs who want to do fancier dishes than boiled lobster have traditionally had to laboriously extract raw lobster meat from the crustacean. But Shucks now offers packaged raw meat to restaurants that has been "cold pasteurized" by the Avure machine for a seven-day shelf life. The efficiency and cost savings of using a machine also has allowed Shucks to get more creative in how it packages and markets lobster meat. Now, lobster parts such as claws can be packaged together. For instance, Shucks offers what it calls lobster spaghetti, thin strands of meat taken from the legs, that usually take so much time to extract they are almost not worth the effort."

Shucks CEO on MSC commission for Maine Lobster Fishery

Governor Baldacci announced a commission to pursue MSC Certification for Maine Lobster. Shucks is proud to have our President and CEO, John Hathaway as a member of the group.

“The Maine lobster brand is known the world over for its quality and high value,” Governor Baldacci said, “and we know that the lobster resource is sustainable thanks to the efforts of Maine lobstermen. Obtaining certification by the Marine Stewardship Council is an essential step in protecting and enhancing our brand and making sure that Maine lobsters can compete in markets around the world.”
