Shucks has 2 Finalists in the IBSS 2009 New Product Competition!

Our new Maine Lobster Carpaccio and Maine Lobster Ceviche have both been selected as finalists in the International Boston Seafood Show 2009 New Product Competition.

Both of these products are raw, but FDA certified ready to eat! How can that be? It's the magic of our Big Mother Shucker. We treat the sealed packages with extremely high pressure, killing pathogens even more effectively than cooking. No heat, no chemicals, just water and pressure. The results are the delicious, contemporary flavors and textures of raw seafood with no risk.

Maine Lobster Ceviche is a retail package of two servings. The raw lobster meat is in one pouch and the zesty accompaniments are in another. Thaw, mix the ingredients in a bowl, chill and serve with tortilla chips. An affordable, unique lobster treat!

Maine Lobster Carpaccio is a fantastic foodservice item. Slice thin medallions from the frozen 7oz package and they quickly thaw on the plate. Drizzle with olive oil, sprinkle on salt, pepper, lemon zest, and garnish for a wonderfully delicious, attractive and unique appetizer. The thin slices mean each package goes a long way--toward lower food costs and lower menu prices, perfect for today's cash conscious diner.

We are proud to say that we are the only company with two finalists in this year's contest. Wish us luck, and come by our booth (2056) if you are at the seafood show next week.

A Celebration of Lobster

There are few foods, if any, that carry the prestige of Maine Lobster. Top chefs love amazing their guests with the flavor and texture of lobster but often have to make sacrifices to do so. To get the best quality, many chefs use live lobster and are forced to cook the meat in their own kitchens to extract it. They find themselves faced with the hassles of storage, shrinkage, variability of supply and preparation. Avoiding these challenges, however, can mean a sacrifice of quality. In kitchens without the time and space for live lobsters, the only choice is frozen, pre-cooked lobster, which lacks the flavor and freshness of live lobster.

But now gourmet chefs don’t have to choose between quality and convenience. Shucks Maine Lobster offers the perfect alternative — fresh, raw, hand-shucked lobster. Our products are fresh and raw, which means they're never cooked or overcooked. And because our products are hand-shucked and out of the shell, busy chefs no longer waste precious time and labor extracting the meat themselves. This combination ensures that chefs always receive consistently high-quality lobster meat.

Now chefs can delight the palettes of their patrons in creative, exciting ways not possible with traditional boiling or steaming. Lobster can now be butter-poached and served over savory risotto, sautéed in a champagne caviar sauce, or simply eaten as fresh sushimi. Lobster lovers the world over can now rediscover the joys of eating Maine Lobster with fresh, raw, hand-shucked lobster from Shucks Maine Lobster.
