The Recipe That Won Shucks Maine Top Prize in Brussels: Lobster Tartare

Lobster Tartare:
* Shucks Raw Lobster Meat (Tail or Claw Knuckle Meat)
* 1 teaspoon Chopped Chives
* Skinned Diced Tomatoes
* 1 dash of olive oil
* 3 drops of sesame oil
* 1/2 teaspoon soy sauce
* 2 pinches of lemon zest
Roughly chop lobster meat into small cubes. Add the chopped chives, sesame oil, skinned diced tomatoes, soy sauce and lemon zest.
For something really special garnish with beetroot mousse.
